I think the home improvement stores have some wood building kits. There are usually free kid workshops like once a month.

You could also try simple science experiments. For younger kids it's almost like a craft with the activities they have. Target has some decent ones.

My nephew is 4 and loves to paint stuff. I go get some unfinished wood pieces at Michael's, some acrylic paints, and some inexpensive brushes, throw down some newspaper on the table, put him in one of my old t-shirts and let him go to down. I did get some little palettes that I could put paint into, so he isn't dipping into the whole bottle, and reducing spillage.
